Spicy Chicken Salad
 
 
Preparation time: 25 minutes
Cooking time: 20 minutes
Serves 6

Ingredients
1 ½ pounds boneless skinless chicken breasts
1 tbsp olive oil
1 onion, finely chopped
2 cloves garlic, crushed
2 teaspoons curry powder
1 teaspoon ground coriander
½ cup mayonnaise
½ cup plain yogurt
1/3 cup golden raisins
3 tbsp French salad dressing

Directions

1. Boiled chicken breasts about 20 minutes or till tender, drained, shred the chicken and set aside.

   
2. In a small saucepan heat oil. Cook onion and garlic in oil till tender. Add curry powder and coriander. Cook and stir for 2 minutes. Let it cool.
   
3. In a bowl stir together mayonnaise, yogurt, raisins, and salad dressing. Add onion mixture and stir till well combined.
 
4. Combined shredded chicken and mayonnaise mixture, Cover and chill till serving.
