Preparation

Ingredients
3 frozen Cornish game hens, thawed
3 tbsp honey
2 tbsp cooking oil
1 tbsp rosewater
1 tbsp lemon juice
2 teaspoons ground cardamom
½ teaspoon salt
Pinch ground red pepper
½ cup blanched almonds
Fresh coriander or cilantro

Directions
1.
In a bowl combine honey, oil, rosewater, lemon juice, cardamom,
salt, and ground red pepper. |

| 2.
Line a baking sheet with a piece of foil large enough to wrap
around the hens. Place hens on foil. Pour a little honey mixture
into cavity of each hen. Pour remaining honey mixture over hens
and sprinkle with almonds. |

| 3.
Bring foil up around hens and seal by folding over the edges.
Bake in a 350 oven for 1 hour. Unwrap and spoon cooking juices
over hens. Roast, uncovered, for 30 minutes more or till golden
brown, tender, basting with cooking juices occasionally. |

Let stand 5 minutes. Serve with almonds and garnish with fresh
coriander or cilantro. |
