Ingredients
3 lbs chicken
2 lemons, coarsely chopped
4 green onions, chopped
2 tbsp chopped fresh lemon thyme
2 cloves garlic, crushed
1 tbsp olive oil
6 sprigs fresh lemon thyme
4 thin slides prosciutto

Directions
1.
Preheat the oven to 350F. Place the lemons in a bowl and add
the green onion, chopped lemon thyme, garlic and some pepper
and mix to combine. Spoon the mixture into the cavity of the
chicken. |

| 2.
Bend the chicken wings back and tuck them behind the body. Tie
the drumsticks together using string. Place in a roasting pan
on a rack, brush with the oil and top with the lemon thyme.
Cover the breast with overlapping slices of prosciutto. |

Cover the chicken with aluminum foil and bake for 1 ½
hours, or until cooked through. |

| 4.
Remove the foil and cook for another 15 minutes, then allow
the chicken to rest in a warm place for 15 minutes before carving.
Discard the stuffing before serving. |
