Chicken with Blue Cheese

Chilling time: 30 minutes
Cooking time: 5 minutes
Serves 4
Ingredients
4 boneless skinless chicken breasts, pounded thin
1 tbsp chopped parsley
1 tbsp chopped chives
3 oz blue cheese, crumbled
¼all-purpose flour
Freshly ground pepper
1 egg, lightly beaten
½ cup fine dry bread crumbs
Oil for deep-fat frying
Chicken with Blue Cheese

Directions

1. Lay chicken breasts on a flat surface; sprinkle with parsley and chives. Divide cheese evenly over chicken. Roll up chicken and secure with toothpicks.

   
2. Dust chicken with flour and season with pepper. Dip chicken into egg and coat in bread crumbs. Place in refrigerator for 30 minutes.
   
3. Fry chicken in hot oil for 5 minutes or till golden brown. Drain on paper towel.
