Ingredients
4 boneless skinless chicken breasts, pounded thin
1 tbsp chopped parsley
1 tbsp chopped chives
3 oz blue cheese, crumbled
¼all-purpose flour
Freshly ground pepper
1 egg, lightly beaten
½ cup fine dry bread crumbs
Oil for deep-fat frying

Directions
1.
Lay chicken breasts on a flat surface; sprinkle with parsley
and chives. Divide cheese evenly over chicken. Roll up chicken
and secure with toothpicks. |

Dust chicken with flour and season with pepper. Dip chicken
into egg and coat in bread crumbs. Place in refrigerator for
30 minutes. |

Fry chicken in hot oil for 5 minutes or till golden brown. Drain
on paper towel. |
