Ingredients
6 chicken breast halves
1 red sweet bell pepper
1 yellow sweet bell pepper
4 oz young spinach leaves
2 oz feta cheese
2 tbsp oil
Directions
1.
Place each chicken breast between 2 sheets of plastic wrap
and flatten with a meat mallet or rolling pin to a ¼
inch thickness. |

Place the peppers, spinach and feta at one end of the chicken
breasts. |

| 3.
Roll up the chicken breasts, starting from the end with the
filling. |

| 4.
Tie the chicken at intervals along the roll, then tie lengthwise
to secure. Heat the oil in a skillet, add the chicken rolls
and cook over medium heat, turning frequently, until browned
all over and cooked through. |

| 5.
Remove the string and cut into ¾ inch slices. Serve with
a mixed green salad. |
