Ingredients
¾ cup butter or margarine
1 teaspoon finely shredded lime peel
2 tbsp lime juice
2 teaspoons grated gingerroot
1 green onion, finely chopped
½ cup parsley, finely chopped
1/3 cup butter or margarine
6 boneless skinless chicken breasts
All-purpose flour

Directions
1.
In a bowl beat ¾ cup butter or margarine with an electric
mixer till fluffy. Add lime peel, lime juice, gingerroot,
and green onion. Beat till well combined. |

| 2.
Shape butter mixture into a 4 inch log. Wrap in waxed paper
and chill for 30 minutes. Roll butter log in chopped parsley.
Rewrap and chill until serving time. |

| 3.
Dust chicken lightly with flour. Grill on an oiled grill rack
directly over medium coals for 15-20 minutes or till chicken
is tender and no longer pink, turning once. |

Cut chilled butter log into ¼-inch slices. Place 2 butter
slices on each chicken breast and serve. The butter will melt
to form a sauce. |
