Barbecued Chicken Breasts with Lime-Ginger Butter
 
 
Preparation time: 20 minutes
Chilling time: 30 hour
Cooking time: 15-20 minutes
Serves 6

Ingredients
¾ cup butter or margarine
1 teaspoon finely shredded lime peel
2 tbsp lime juice
2 teaspoons grated gingerroot
1 green onion, finely chopped
½ cup parsley, finely chopped
1/3 cup butter or margarine
6 boneless skinless chicken breasts
All-purpose flour
 

Directions

1. In a bowl beat ¾ cup butter or margarine with an electric mixer till fluffy. Add lime peel, lime juice, gingerroot, and green onion. Beat till well combined.

   
2. Shape butter mixture into a 4 inch log. Wrap in waxed paper and chill for 30 minutes. Roll butter log in chopped parsley. Rewrap and chill until serving time.
   
3. Dust chicken lightly with flour. Grill on an oiled grill rack directly over medium coals for 15-20 minutes or till chicken is tender and no longer pink, turning once.
 
4. Cut chilled butter log into ¼-inch slices. Place 2 butter slices on each chicken breast and serve. The butter will melt to form a sauce.
